I woke up super late this morning {eeeekk} but still needed a healthy breakfast! If I don’t eat breakfast I end up snacking on unhealthy things all day.
This meal is so quick and so easy!! It’s a great start to your day! Lots of whole grains, healthy fats {avocado}, and amazing proteins {eggs}.
Here is what you’ll need:
- 1/2 Avocado
- 1/2 English Muffin
- 1 Egg, poached
- Butter {optional}
- Salt and Pepper {to taste}
Here’s what you do:
- bring 2 cups of water to 190 degrees {not boiling}
- gently place your egg in 190 degree water, reduce heat, cook for 3 minutes
- In the meantime….cut up 1/2 your avocado & toast your English Muffin
- Assemble π
- Enjoy
This took me 5 minutes to do!! Β I even made my sister one too!! {She had cheese on hers and not avocado so you can personalize it anyway you like }
